Beeramisu

I know what you're thinking, tiramisu with beer? I thought the same thing, I've never seen such a thing! I came across this recipe while pinning ideas off Pinterest, as per usual. It's such a creative twist on the classic tiramisu, which I equally love! I normally love anything coffee related. I never really liked the taste of coffee until college. I used to drink a lot of it to keep me awake for all those long all-nighters before exams. Then, I developed an acquired taste for it and now I have to have a cup every morning. I feel like I can't start the day without a cup of black coffee. 

Anyhow, this dessert is super simple to make and doesn't even take that many ingredients! I used this new local beer that I recently discovered : Thrilla in Vanilla . Give it a try!

Makes 6 mini mason jars   

You'll need:
1/4 cup mascarpone, softened
3 tablespoons sugar
3 tablespoons heavy whipping cream
1/2 cup stout
6 ladyfingers
cocoa powder, to garnish

Combine the mascarpone and sugar in a bowl and mix until sugar dissolves. In a stand mixer (or hand mixer) whip the whipping cream until stiff peaks form, about 2-3 minutes. Then, fold the whipped cream in to the mascarpone.

Pour the beer into a shallow bowl. Dip the ladyfingers into the beer, just flip once! The ladyfingers will fall apart if soaked for too long. 

Place the ladyfingers in a tight single layer on the bottom of your cup or mason jar (I had to break mine into smaller pieces). Spoon on spoonfuls of the mascarpone and smooth out. Repeat this until you get to the rim of your jar.

Garnish: Dust with dark cocoa powder.  

Refrigerate for a couple hours (or overnight) before serving.
