Honey Sriracha Grilled Chicken Quinoa Salad

One of my new year's resolution for this year was to eat healthy and to start living a healthy lifestyle. That never happened. But recently, I had to get my gallbladder removed (RIP yeji's gallbladder), so now I don't really have a choice but to eat healthy. I didn't know this before my surgery, but if you don't have a gallbladder--you can't eat anything that's greasy (otherwise, it'll go right through you..is that TMI?)

I decided to start eating healthy, or try to at least.  So, here's a salad to kick it off! 


I know this can be a hearty salad, so you can add more or less of the chicken or quinoa. 
Drizzle a little balsamic glaze and you're good to go! Balsamic glaze is so yummy on anything really. 


Honey Sriracha Grilled Chicken Quinoa Salad

Serves 1

Honey Sriracha Grilled Chicken

You'll need:
1 chicken breast
3-4 cloves garlic, minced
1 tbsp honey
1/2 tbsp soy sauce
1 tsp Sriracha chili sauce
1 tsp rice vinegar or apple cider vinegar
Pinch salt + pepper

In a bowl, mix the minced garlic, honey, soy sauce, Sriracha, vinegar.
Add chicken, stir to combine well. Marinade in refrigerator for 30 minutes. 

On stove, heat a pan (I prefer a cast-iron) on medium heat. Add a bit of oil to lightly coat pan. 
Transfer marinated chicken to pan and cook on both sides until golden or until cooked (depending on how thick your chicken breast is). Serve whole or sliced. Enjoy immediately!

Quinoa Salad

You'll need:
1 cup quinoa, cooked
1/2 cup arugula
1-2 radishes, sliced thinly
1 tsp balsamic glaze, for garnish

In a small bowl, scoop quinoa and add arugula, radish slices, and chicken atop. 
Drizzle with balsamic glaze or any other sauce/dressing you prefer.
