If I was stuck on an island and only had potatoes to eat (don't ask why there would be potatoes on an island), I feel like I could. Did anyone have to do a vegetable project in grade school? I remember doing one in 3rd grade and of course, I chose potatoes! I made this ridiculous commercial about potatoes on my dad's camcorder. I wonder if I still have that VHS laying around somewhere...
I have a new but old favorite, I say that because it's my old favorite with a new twist: french fries, but with truffle oil and loaded with mushroom-onion goodness. I love making oven baked fries because you won't have to clean up the oil splashes if I were to deep fry them, plus I feel healthier eating them and they're just as crispy.
Plain fries are yummy as is, but the caramelized onions adds a tangy, sweetness to the salty fries. I love that sweet and salty combo. I think mushrooms pair really well with truffle oil and I just like the texture of mushrooms. This one's worth a try!
Oven Baked Loaded Truffle Fries
4 medium russet potatoes
2 tbsp olive oil
1 tbsp truffle oil
salt + pepper
Preheat your oven to 400F. Rinse your potatoes thoroughly if you're going to leave the potato skin on. Cut your potatoes lengthwise into 1/4 inch strips.
Soak potato strips in cold water for 30 min, drain and pat dry, completely dry.
In a big bowl, coat potato with olive oil, truffle oil and salt + pepper.
Divide potato onto baking sheets lined with parchment paper.
Increase oven temperature to 425F and bake fries for 20-25 minutes or until golden on the outside.
Caramelized Onions and Shiitake Mushrooms
2 medium onions
15 slivers of shiitake mushrooms
1 tbsp olive oil
salt + pepper
2 tsp balsamic vinegar
Slice onions and add to pan with oil on medium heat. Cook for 40 min, tossing (with spatula or wooden spoon) and checking pan every 10 minutes so it won't burn. Once the onions have turned into a golden brown, deglaze onions with balsamic vinegar. Add shiitake mushroom for flash cook for 5 minutes.
Assemble loaded fries:
Layer the caramelized onions and mushrooms atop the crispy truffle fries.
Feel free to drizzle some more truffle oil on top if you'd like (that's what I did!).
